The 1989 La Dominique hit all the right notes. Perfect cork. Great bright ruby color. Wonderful nose. Silky smooth mouth feel. By itself was not fruit forward at all. Well with 1995 one has the tradeoff that many board favorites like d'Issan and Ponet Canet had only just begun to emerge -- certainly making very fine wines -- but not like their radiant efforts of just a few years later. The get jacketed fermenters and then use fairly inexpensive beer line cooling systems to chill.
