Thomas Keller has a trick with the wine in Coq au Vin. He boils it and sets it alight. It gets rid of any astringency, and the depth of flavor increases. We tried it with and simply trying to boil off the alcohol, and Keller’s was much better. Other tip, use frozen baby pearl onions.

Just received a massive offer of older VCC in great condition. I bought bottles of 1974 and 1994 which I need for my vertical, and two magnums and several bottles of 1982.

There is more 1982 left and several other vintages. PM me if you want details.

The question of whether a wine closes down seems to be a vintage by vintage phenomenon. And from my experience, it tends to occur across the vintage as a whole. I wrote an article many moons ago comparing the cost of a filet mignon for two to a current vintage of Lynch. Article long since disappeared but at the time, around 1994, Lynch was $45 and the filet $28.

Giscours 1979 is my Eureka wine. Still decent but beginning its downward evolution. Last tasted May 2022 and a 92 point wine.

My three favorite producers in order are Ecard, Pavelot and Bize. All have a capacity to age. I seem to remember there are some 1993 Ecard Serpentiere at Belmont for around $100, which may be a lot for a Savigny but can be enjoyed immediately. Sadly most of the properties of Bordeaux were in serious financial trouble in 1982. Selection or throwing away grapes in green harvest, second wines were for a very few. Recession and scandals did not make life easy. 1982 changed things, but still I don’t think it was until the early to mid nineties...

The 2010 Pichon is quite good, but the ‘05 is nowhere near as good as Baron, which doesn’t happen very often.

I think the 1989 might be a good start, but still vote for Magdelaine.

Just bought 6 half bottles of Prum Eiswein GK 1998. Really excited by this. Tasted several years ago, and never forgot how great it was, so grabbed them when it was offered.

Since there is little hope for another Pomerol 2014 to win, I will stifle any call for 2014 VCC. So I think I will go for an Uber Medoc, the utterly brilliant if totally unready 2010 Palmer. If the merchants in 1855 could have tasted this wine, they would have crowned it as a First Growth.
