I've had some very good Cantemerle, don't think I've ever had a Dufort.

Cantemerle can be consistently good, rarely great, if ever. And it usually is very affordable.

Some wines are better with food, some are better for sipping on their own, some are better with broader ranges of foods, others with fairly specific foods and spices. Yeah, had some bad days and popped some great Bordeaux, sniffed and enjoyed and got lost. Helped me they did. Trouble is, this was many of my Bordeaux, Burgundy too. Half-way sane again, damn, missing most of my cellar.

Really good Bordeaux or Burgundy or Cote Rotie, or Brunello or whatever... They are all just beautiful just drinking. With food, many and i mean MANY wines are just fine. Finest wines are best by themselves or with some cheese and olives or such. With food, a much more variety of wines is Just Fine ...

Interesting, d'Arsac used to be one of my hidden pleasures, often obtainable for $12. Last I had were some 2001's methinks. Always did like it, nice Margaux character, but didn't seem built for the long haul. These things are approaching $30? Man have I been gone awhile!
