I definitely want to try some of these vaunted BWE WOTY '05 Burgs, but a couple of Chateauneufs would round out the evening nicely.

I am happy with any wine theme but actually prefer multi-theme dinners. Speaking from experience, there is nothing more deadly than 20 or 30 bottles of exactly the same type of wine in rapid succession (try 31 Northern Rhones, 25 petit Bordeaux or 19 German Riesling sometime and you'll see what I mean).
With a five course meal, maybe we could start with Champagne and do flights chosen from those alredy suggested:
Italian whites (could get a few bottles from Dean's list) or German Riesling (I'll always suggest German)
2005 Burgundy
older Burgundy
Rhones
Italian reds (also some good ones on Dean's list)

WE are now at the limit for the private room. If more people want to attend, we will have to move to a semi private space. Dean has been kind enough to waive any kind of deposit and asks only that I give him a credit card as a space holder which I will do this week. Given this courtesy, I am considering asking attendees to send me a check and I will then handle dinner payment which avoids collecting money from everyone at the end of the evening. There is a 48 hour cancellation policy. I also have a paypal account which can be utilized if that is your preference but there is a fee of 4 or 5% I believe. Does this make sense or is there a better way? For 20 people, each person's share is $90 which includes 10% tax and a 20% gratuity.

I should ask if anyone has dietary, allergy etc. restrictions? I have one request for a modified dinner so want to make sure everyone is comfortable with choices. We will be served family style so I think it will be easy to avoid any foods you can't or don't eat.

I am violently allergic to clams, but am fine with any other shellfish. I can always skip a dish if necessary, so long as it is not a surprise after the fact...

My experience with pairing up burgundy with italian food is light on source. A vegetarian lasagna probably would do it. I am sure the chef would have no problem making the right food match for the burgundy.
