Again, if you are in the Sacramento area, or even the bay area, there will be an offline at my house this Saturday. We are pouring an 89 Montrose, 90 Montrose and 82 Calon Segur. If you are interested drop me an email.

That's a great lineup. Wish I could make it, but I can't.

I decided to smoke some ducks on Saturday for the offline. I will start brining them tonight in a solution of salt, maple syrup, apple cider, herbs and garlic. It will be a 12 hour brine. I'll smoke them for about four hours using cherry wood and a base of oak. I will make a a port, soy and honey glaze to finish. Enjoy.

My mouth starts watering every time I read one of your cooking/smoking posts, Bill.

We really need to come visit you guys out there at some point Bill, that sounds like an awesome meal. And oh, those three wines aren't too shabby.

While I was tasting my 1990 Chateau Les Ormes Sorbet, I was thinking that you were drinking the 1990 Chateau Montrose... different ball game.

So how were your wines?
