2011 Domaine Servin Butteaux 1er
Fairly deep gold. Oak and butter on the nose that softens with time. Minerals and spicy oak on the palate. Long mineral finish that displays some bitterness although not unattractive. Citrus, orchard fruit, yellow apples on the nose and the palate. Young. Evolves substantially in the glass over an hour or so. Soft spices in the mouth. Smooths out and rounds out with air. Medium bodied, good balance although somewhat low acid for Chablis. This is a very unusual style of Chablis for me. Very international. I think it needs time or may turn into something more Chablis-like over time. I was a little disappointed. A little strange, a kind of Cali-Chablis hybrid. Anyone try this producer?
