96 Lynch Bages Showing Its Stuff

Saturday night the partnership ventured across the border to Quebec to celebrate our senior partners retirement after 40 years of service in the same department. I had the fortune to look after the planning of the venue,wines and meal. Le Baccara is a fabulous and always dependable but not inexpensive restaurant in the Casino de Hull. Their wine cellar has been a bit of a show piece in the region but it has ballooned with top end Bordeaux/Burgundy which they are trying to thin their stock by reducing their list prices by 40-50%. The 96 Lynch I thought was at a reasonable $170 CDN or about $145 USD with the exchange right now. Not bad for a 5 star restaurant!!

2 hour decant and nicely showing dark cassis, cedar and leathery notes on the nose upon openning then blossomed after two hours. Tannins softened and matched perfectly with the Wapiti loin main course. Nice drinking window but still a long ways from being fully evolved. Still very much showing its primary fruit and nuances. Loads of time left in this one to enjoy for decades to come. Best part was there was 3/4 of a bottle left over which they recorked/bagged and sent it home with me to enjoy the next day. Still very nice on day two but some of the bloom had gone off the flower.

I'm afraid to crack open my case, otherwise I will drink them all in a few months.

It would be hard to stop after the first bottle once the case is opened Jim.
