When should I uncork this bottle?

It was given to me by Francois back in 2003.
It is from the 1995 vintage.

They last forever, but at 20 years of age it should be just fine to drink now.

Think of it as akin to a fino sherry.

The classic local food combinations are chicken in a cream and morel sauce and aged Comté cheese.

Must make it to the Jura one of these days...

We drank some D'Arlay last fall when we visited the Jura. I highly recommend Besançon, but not vin Jaune. It is an acquired taste, I guess. The Juranians drink it with Comté cheese, as Alex mentioned. This powerhouse cheese does not subdue vin Jaune.

If one is making a fine fondue, some recipes call for a few ounces of Comte.

But its difficult to find where I live.
