2009 Domaine Pavelot Savigny les Beaune 1er cru Dominode

With ouïghour lamb pasta tonight. A very perfumed and nice meal.

The Pavelot is concentrated for Pinot. Medium red, nose of concentrated cherries, cinnamon, old roses, pink peppercorn, pomegranate, very perfumed nose. In mouth, you could think it is a Bierzo, good core of healing herbs, cherries, cherry tree wood flavors. Strong red berries and lush wood on the mid-palate, but with good tannins, and a decent long final on fruits and light spicy cumin. Very good. Tn: 90.

It started slowly and we'll try it now with the cheese.

Pavelot wines need time to shed the concentration and rusticity. Bize drinks younger. Cheers!

I agree Carlos, the Pavelot will be even better in 7 years. But it was delicious anyhow and basically, MC wanted a Bourgogne and i did not wanted to dig too much in the reserve so it was the first Bourgogne I found.

Despite strong reviews, I never got along too well with the 2002, either on release (seemed better) or subsequently (seemed to dry out). I hope yours has a positive evolution.
