A dear friend of mine recently gifted me a signed copy of The Cook Book by Oscar of the Waldorf. I thought I would share a couple of photos for your amusement. Oscar was not a chef himself but he is credited with the recipe for Waldorf Salad. It is in amazing condition for a book published in 1896. Note the 1892 DRC recommendation for game and the 1881 Marbuzet with entrees....cool stuff.

That must have been before Marbuzet got chopped up into all the little pieces that bear parts of that name today....
