Rose Champagne of course - Vilmart Cuvée Rubis. This was a wonderful match - November 2016 disgorgement 90% Pinot Noir and 10% Chardonnay. The idea for this match comes from David White, author of But First Champagne. By the way, this is a fabulous Champagne that was around $70.

Sounds like a great combo.
Seem like that's about the right amount of age for it? I have one that's Oct 2018 that I've been waiting on. May open around Christmas unless it could use more age

I avoid fried food due to cholesterol and digestive issues but any food that is a bit oily and fatty is a good match with drier Champagne. Wendy likes stir fried food and I am only too happy to glug down Champagne with it. It cuts the fat.
However I’ve never really had a taste for Rose Champagne but the VC sound nice.

Champagne and fried chicken is a heavenly match. As is salmon, though I tend towards Oregon Pinot for that.

Crispy salmon skins from a cast iron pan are a special cunning way we wrap up the dog's medicine occasionally. He goes crazy for them.
