Last night, three excellent wines.
Savart's Premier Cru is a very good Champagne. 100% Pinot Noir, with a focus on finesse: very fine, abundant bubbles, a delicate nose of vanilla, minerals, white berries, and white peaches. The palate is wonderfully flattering, the bubbles providing structure, with beautiful, proud, and serious fruit (like a German or Austrian Riesling), and a chalky minerality. The only drawback is the length. Rated 92-93.
Paul Cherrier's 2023 Sancerre follows the Champagne well. Pale, with a nose of herbs, boxwood, and blackcurrant, a slightly lemony note, limestone, and shellfish—very typical. The palate is fresh, with lemon and lime fruit, a touch of seriousness with minerals and a slight bitterness. A hint of unsweetened green grapes. 12.5% alcohol. It just needed some raw oysters or a farmhouse goat cheese. Rated 92.
L’Esprit de Chevalier 2022 is young. Dark red, concentrated nose of black and red berries, soot, light and ripe spices. Good presence on the palate, pronounced, blackberry/raspberry/cherry, a touch of oak and slightly charred wood. Dark floral notes on the long finish. A good second wine in this vintage. Rated 91. Room for improvement in 5-8 years.
